Mealprepping 101 | A Protein Packed Dinner Recipe


I know it's been quite some time since my last meal prep post but it's always so dang hard to photograph everything since we often prep on Sunday nights. Yesterday's meal prep included a new recipe that I am just super jazzed about and had to share with ya'll. I did make enough for five days of meals so there's quite a lot of food but this easy protein filled stir fry is just delicious and good for you! 

What you'll need: 

2 medium sweet potatoes 
3 cups of spinach 
1 pack of Trader Joes Frozen Stir Fry Medley
(I got lazy but you can substitute with any vegetables you prefer) 
3 lbs of Ground Chicken
1 Red Onion 
3 tablespoons of Olive Oil 
Soy Sauce to Taste 
Pepper
Salt


Step #1 : You're going to start off by caramelising some chopped red onion on the stove top with a tablespoon of olive oil. Go ahead and add as much as you'd like, I personally went all out and chopped up an entire red onion because it creates this zesty base for the rest of the meal. Let the onion get nice and brown and then add the ground chicken.
Step #2 : Season the chicken to taste with hints of pepper and a dash of salt. The soy sauce is going to have sodium in it so go easy on the salt. (A personal struggle I always have.) I went ahead and added another dose of olive oil to really allow everything to simmer. While the chicken begins to heat up, start chopping your sweet potatoes into nice small squares. They're usually rather difficult to dice and cook slower if they're not finely chopped. Boil water in a large pot and begin prepping the chopped potatoes. I personally don't even need to season my sweet potatoes but you can always add salt afterwards. 
Step #3 : When the water is finally cooking, go ahead and toss in your chopped potatoes and wait a few minutes until they soften. I prefer them not to be too squishy so just test one every now and then to your personal preference. Let's add some spinach.
Step #4 : I love spinach and it's so darn good for you so I always go all out. Once my chicken was beginning to look a little brown and well done, I wilted some spinach in the mix. I honestly went back and added like three more cups but just like everything else in this recipe, do whatever you personally enjoy. I love seeing a mixture of greens in my dinners so I just kept adding more!
Step #5 : In the mean time, go ahead and microwave the frozen stir fry medley and then once prepared, add it to your mix! Splash in that final dose of olive oil to get everything cooking! Stir those greens in with the ground chicken and spinach and watch that beautiful healthy mix turn into a protein packed meal. 
Step #6 : I went ahead and drizzled about two tablespoons of soy sauce on the medley once everything was cooking together and just kept stirring up the pot, allowing every piece to really heat up and cook fully. 
Step #7 : The sweet potatoes should be just about done now, about 9-10 minutes later and all you're going to have to do is drain them and you're good to go! Scoop a nice helping into your five containers for the week and seal them up for dinners on the go. Add in your prepared chicken medley and you have yourself a delicious dinner choice. This meal is flavour packed and super yummy, it holds four to five days and is perfect for dinners or lunch.
